Recipe: Greek Turkey Meatloaf


Meatloaf may seem like a basic, boring meal you grew up eating, but there are so many ways to add more flavor and pizzazz to this excellent dinner choice!

Although it can be made with beef, using ground turkey is a great lean protein source that gives you a different flavor from your standard meatloaf. Instead of using breadcrumbs, adding oats is a unique way to add fiber and whole grain to a dish that is normally doesn’t have any. Incorporating cooked spinach adds antioxidants, vitamins, and minerals. It’s easier to get your veggies in when they are mixed into the meal! This recipe adds subtle ways to get extra flavor; garlic powder, oregano, and feta cheese. Mixing these ingredients in provide a delicious, salt-free way to enjoy your meal.

Meatloaf traditionally uses a ketchup-based sauce, but this recipe provides a unique and tasty yogurt sauce. I use plain Greek yogurt for added protein. Mix it with chopped cucumber, olive oil, garlic, and dill. This light sauce is another great way to add flavor without extra salt.

If you have a busy schedule, this meal is perfect to prepare the night before and throw in the oven when you’re getting home. By combining spinach, feta cheese, and spices, you not only add beneficial nutrients to your meal, but also creating a flavorful twist that makes healthy eating delicious.

Meatloaf Ingredients:

1 lb 93% lean ground turkey

½ box frozen spinach (9oz size)

¼ cup chopped onion

1/3 cup old-fashioned or quick-cooking oats

2 oz feta cheese, crumbled

1 egg

1 tsp dried oregano leaves

½ tsp garlic powder

½ tsp pepper

Yogurt Sauce:

6 oz container plain Greek yogurt

½ medium cucumber, peeled and finely chopped

1 Tbsp olive oil

1 clove garlic, finely chopped

½ tsp dill weed
